I have an iPhone 11 that I just updated to iOs 15 a couple days ago and I have a Watch SE that is updated to iOs 8 but today, I unpaired them because they're not connecting with each other (my fitness for today is not syncing and I'm not getting text alerts on my watch). When trying to pair them again, it does not work. I already turned both off and back on but that does not do the trick. It's very frustrating.

Try delete old Apple Watch backups

On your iPhone go to Settings > General > iPhone Storage.

Scroll down until you find Watch and tap on it. delete all the back ups. Also try … Delated the Watch app and reinstalled and also hard reset your apple watch by holding down the side buttons. Make sure the watch is 100% fully charged.
